English-Muffin Egg Pizzas

Ingredients

  1. 4 English muffins
  2. olive oil
  3. tomato slices
  4. 2 hard-cooked eggs, sliced
  5. grated mozzarella
  6. oregano
  7. kosher salt

Directions

  1. Make Hard-Cooked Eggs.
  2. Toast 8 English-muffin halves and place on a cookie sheet.
  3. Drizzle each with olive oil, then layer on tomato slices, hard-cooked egg slices (1/2 an egg each), and a little grated mozzarella. Sprinkle with oregano and kosher salt.
  4. Broil 5 minutes or until the cheese melts.

 

Yogurt and Granola cups

Ingredients

  1. ¼ cup of granola
  2. ½ cup of plain yogurt
  3. 1 tablespoon of maple syrup or honey
  4. ¼ cup of favorite fruit

Directions

  1. Place granola on bottom of cup.
  2. Spoon yogurt on top.
  3. Top with fruit and drizzle with syrup.


Eggs in a hole

Ingredients

  1. 2 slices of wheat bread
  2. 2 tablespoons of butter
  3. 2 eggs
  4. ¼ cup of chopped ham
  5. salt and pepper to taste

Directions

  1. In a bowl, scramble eggs and chopped ham together.
  2. Spread the top of each slice of bread with ¼ tablespoon each of the butter. Using a round cookie cutter or drinking glass, cut a 2½- to 3-inch hole in the center of each slice of bread, reserving the cutout pieces.
  3. Heat the remaining 1½ tablespoons of butter in a large nonstick or cast-iron skillet over medium heat. Place the bread and the cutouts, buttered-side up, in the skillet. Pour half of egg-ham mixture into each hole. Season with teaspoon salt and pepper. Cook until the underside of the bread is golden, 3 to 4 minutes. Flip and cook the egg to desired doneness, 1 to 2 minutes for a runny egg.

 

Breakfast Burritos

Ingredients

  1. 1 cup chopped tomatoes
  2. 4 corn tortillas
  3. 4 eggs
  4. 1/2 cup of cheese
  5. salt and pepper to taste
  6. Lean ham, turkey bacon if desired

Directions

  1. Scramble eggs. Add salt and pepper.
  2. In a skillet warm tortillas.
  3. Transfer eggs and desired protein to tortillas.
  4. Top with tomatoes and cheese. Roll and serve.
