While soup can be a winter favorite for many adults, kids don’t always see the appeal. If you have a picky eater on your hands, the thought of mixed mystery ingredients (veggies included) may send your kids running. But don’t cross it off your meal plan just yet. Soups can be a great source of daily vegetables and filling fiber, not to mention easy to prepare. Having trouble finding a soup your kids will eat? Here are a few tips:
- Host a family “soup night” where each child gets to pick what ingredients they want to put in their own soup.
- Create a fun “topping” bar to add extra nutrition and flavor
- Let your child pick out their own cute bowl or mug and utensils
- Why not take one of your kid’s favorite foods and make it into a soup! Try this easy recipe:
Kid Pleaser Pizza Soup
1 lb. turkey or chicken Italian sausage
32 oz. beef broth
1 can tomato sauce (15 oz.)
1 can diced tomatoes (14.5 oz.)
1 can of diced green chilies (4 oz.)
½ small onion diced
1 Tbsp. basil
2 Tbsp. oregano
1 ½ tsp kosher salt
Set up a topping bar and let your kids choose their favorites!
- Mozzarella cheese
- Pepperoni slices (diced)
- Mushrooms
- Black olives
Cooking Directions:
- Cook and crumble Italian sausage over medium high heat. Remove and drain.
- In a large crockpot, add all ingredients except the toppings. Cook on low for 6 hours.
- Serve and let your kids top with their favorites!
