Baked Brussel Sprouts and Apples

Ingredients

• 1/2 cup fresh apples, chopped

• 8 ounces Brussels sprouts, trimmed and quartered

• 2 tablespoons apple cider vinegar

• 2 teaspoons extra-virgin olive oil

• 1 teaspoon fresh thyme, minced (can be substituted with 1/2 teaspoon dried thyme)

• 1/4 teaspoon salt

• 1/8 teaspoon black pepper

Directions

1. Preheat oven to 375 F.

2. Mix together the Brussels sprouts and fresh apples in an 11×17-inch dish.

3. Add apple cider vinegar, extra-virgin olive oil and all seasonings, then toss.

4. Bake until Brussels sprouts are soft enough to eat (about 25 minutes).
