Spring recipes: Making fresh foods more fun

With very few ingredients make eating fresh more fun! This spring try these quick and easy recipes this that your kids are sure to love.

Fresh sliced berries with lite whipped topping or yogurt dip
Wash fresh strawberries, blueberries or raspberries thoroughly and slice larger berries into smaller pieces as needed Assemble berries in a small cup or bowl and top with 1-2 Tbsp. of lite whipped topping

Yogurt dip for fruits (berries or apple slices):

1 cup of plain greek yogurt

1 Tbsp of Honey or brown sugar

1 tsp of vanilla or pinch of cinnamon

Mix all ingredients and serve as a dip with fresh fruit. Store and refrigerate for up to 3 days*


Cucumber bites:

2 peeled and sliced cucumbers (can hollow the middle with a small spoon or melon baller)

¼ cup of light cream cheese

¼ cup light sour cream

1 Tbsp. Dill

2 tsp of dry ranch seasoning

1 cup of cherry tomatoes, halved

Mix softened cream cheese, sour cream, dill and ranch seasoning together. Refrigerate mixture for 30 minutes to 1 hour. Spoon into cucumber cups and top with halved cherry tomato.

Serve and enjoy!
