Sweet Potato Nachos

Sweet potatoes are the perfect nutrient-rich substitution when making nachos. Get your kids involved in the process by letting them add their favorite toppings!

4 handfuls sweet potato chips
2 tablespoons olive oil
¾ cup cheddar cheese
1 cup protein (chicken, beans, steak, etc.)
4 tablespoons sour cream or Greek yogurt
4 tablespoons salsa
Optional: guacamole, chopped cilantro, sautéed veggies

1. Preheat the oven to 350 degrees.
2. Prepare the sweet potato chips.
3. Place the sweet potato chips on a lined baking sheet. Evenly distribute your choice of protein and cheddar cheese on the chips. Bake for 6-8 minutes, or until the cheese is melted.
4. Remove the nachos from the oven and top with the sour cream, salsa and other toppings of choice!
